Cherry Fortified Wine La Fenice, Why We Love It and Why You'll Love it Too

At a recent event in London, in collaboration with I Love Italian Food, we hosted a tasting focused on sweet wines. During the evening, we talked about the best moments to enjoy these wines, explored ideal pairings, and clarified some common misconceptions surrounding them.
We tasted several wines, including a Moscato (whose name, to be honest, slipped my mind) and, of course, our star wine: Cherry Fortified Wine La Fenice.

Finding a truly exceptional dessert wine can feel like a challenge; however, when you discover one that makes you pause and savour the moment, it’s unforgettable. After the very first sniff and sip of La Fenice, everyone immediately recognised the winner. In fact, it’s incredible how a good sweet wine can completely change your perspective on the entire category.

Many people usually overlook sweet wines. Yet, once they try one that truly stands out, everything changes. The room grew quiet as everyone enjoyed its unique balance, elegance, and depth of flavour.
In the end, we couldn’t resist celebrating it. Clearly, La Fenice is something extraordinary. Once you taste it, you’ll instantly understand why!

How La Fenice is Made

STEP 1: The sour cherries macerate in red wine inside stainless steel containers for around 30 days.
STEP 2: The wine is filtered using a pump and a cardboard filter. The sour cherries are pressed using a wine press, and the juice extracted is filtered. The wine and juice are blended together and filtered again.
STEP 3: Sugar, 95% ethanol, and white almond essence are added. The mixture rests in stainless steel for about 10 days.
STEP 4: The finished product is bottled using a stainless steel filler. Once bottled, La Fenice is ready for distribution.
