Deep garnet with orange reflections. Still vivid in the glass; a testament to noble, well preserved ageing. The bouquet is broad and mature. Notes of maraschino cherry and dried plum lead the way, followed by tertiary aromas of leather and tobacco. Ethereal hints of incense, liquorice, and sweet spices emerge gracefully on the finish.
On the palate, it is extremely elegant and harmonious. The fruit is still present but beautifully integrated within a mature structure: ultra fine tannins, balanced acidity, and a body that resonates more with depth than sheer power. Hints of black tea, medicinal herbs, and minerality lend tension and savoury complexity. The finish is long and evolving, with a lingering balsamic note, sweet tobacco, and a saline touch that calls for another sip.
Perfect pairing with rich, flavourful dishes such as wild boar, braised meats, truffle based recipes, aged cheeses or simply to be savoured in silence, as a true meditation wine. Now at its peak, but stable for another 5–8 years.

About the Winery: Valdicava
