The fermentation process lasts for 30 days in stainless steel tanks, where the wine is kept until it reaches the desired level of effervescence. It is then filtered and bottled. This sparkling wine falls into the Brut category, with a residual sugar content of 10 grams per litre. It exhibits persistent bubbles and a fine mousse. The aromas are intense, with fruity notes. The harmonious and elegant character is what distinguishes Brut sparkling wines.

Forte Veneto Bianco IGT 2022 – Colle Regina

Forte by Colle Regina is a wine crafted with passion and precision. It undergoes fermentation in uncoated cement tanks and matures on fine lees for nine months with constant bâtonnage. The result is a wine of remarkable character, produced in limited quantities.
Its pale lemon-yellow color hints at the freshness within. On the palate, it is medium bodied, mineral, and dry, with notes of vanilla and butter, accompanied by vibrant sapidity and pronounced acidity. The nose reveals an intense and straightforward aroma, offering scents of white melon, white peach, and sage.
Only 2,000 bottles of this extraordinary wine were produced.

Trento DOC Nature NV – Corvée

The color is a delicate lemon yellow. The entry is well-balanced, enlivened by vibrant acidity and minerality. This initial impression evolves into an exceptionally precise and harmonious savoury finish, leaving the palate impeccably clean.
On the nose, fresh pineapple and citrus aromas intertwine with hints of aromatic herbs, all elegantly framed by a refined pastry-like sensation.
Aged on the lees for about six months in second-use 225 liter French oak barrels, this wine pairs beautifully with fish, aged cheeses, and creamy pasta dishes.

Bright and luminous lemon yellow color with greenish reflections, accompanied by a persistent and fine-grained perlage. Exceptional as an aperitif, it pairs well with a variety of dishes, particularly seafood, white meats, and vegetables.

Pale ruby red color. Elegant bouquet of cherry, raspberry, blueberry, dried plum, and violet. On the palate, it is dry, medium bodied, and delicate, with a pleasantly bitter finish. Excellent with red meats, game, and aged non-spicy cheeses.

Pet Nat Col Fondo Wild 2020 – Zanotto

A wild and exuberant wine, as its name suggests. It displays a bright yellow color and a range of aromas ranging from apple to ripe pear. Pleasant scents of yellow fruit and bread crust. Complexity and strong minerality are always present. It is a truly unique sparkling wine in the world of unfiltered bottle-fermented wines. It can be enjoyed clear, leaving the sediments at the bottom, or by gently flipping the bottle to re-suspend the sediments and experience the full intensity of the aromas.

Pet Nat Col Fondo 2020 – Zanotto

A slightly sparkling white wine, natural, unfiltered, and re-fermented in the bottle once a year during the Easter period.
It has a straw-yellow color with greenish reflections. The aroma reveals hints of bread crust and a subtle scent of apple with citrus notes. On the palate, it is a dry, complex, and pleasant wine with elegant yeast aromas and typical fruit. It has a slight saltiness and a pronounced mineral finish. It can be enjoyed clear, allowing the sediment to settle, or cloudy by gently shaking the bottle for a bolder taste.
